I was able to find the dimensions for you of the Swagman Park It 3-Bike Stand # S64018.
I checked with Swagman and they said that the stand measured 48" long x 14-1/2" wide, as you can see in the accompanying diagram.

I made a call to Swagman, the manufacturer, to find the dimensions for the 6 Bike Floor Stand - Swagman Park It 6, # S64019, for you. The rack stands at 29 inches tall. It is 25 inches deep (front to back). And is is 34 inches long. I have included a link to the instructions below as well as a video review.

The yellow piece you see in the 360 picture for the Yakima RidgeBack 2 Bike Rack # Y02457 is actually a part of the stand assembly we use when we shoot the 360 pictures for bike racks. We made it yellow so that it is easily identifiable as not a part of the rack. If you look closely at the picture you can see the stand the rack is installed in.
It's also installed further up the shank so that you can still see the portion of the rack that gets slid into a hitch.

I went out to the warehouse and assembled a SportRack 2 Bike Stacker Bike Storage rack, # SR0012, and then measured it. It is 81-1/4 inches tall, 31-1/2 inches wide at the base, 14 inches wide outside to outside of the main support legs, and 22-1/2 inches deep at the base. The # KU24FR three bike version of the Küat Transfer V2 has a weight capacity of 40 lbs per bike. As you mentioned, the 2 bike version, part # KU84FR has a 60 lb per bike capacity.
The Transfer is an excellent bike rack. The U-shaped frame is my favorite feature, it allows you to stand much closer to the rear of the vehicle when loading the inner-most bike onto the rack, which makes it much easier on your back. The Kuat # KU74FR Transfer V2 that you'd looked at, which is compatible with both 1-1/4 and 2 inch hitches has a 40 lb per bike capacity, so it wouldn't safely carry your e-bikes.
However the # KU84FR V2 model which fits 2 inch hitches only, has a 60 lbs per bike capacity, so it will handle 2-60 lb e-bikes with tires up to 3 inches in width. The Swagman XTC-2 2-Bike Platform Rack part # S64670 is a very popular cost effective bike rack. It weighs right around 33 lbs so it is fairly easy to take on and off the vehicle. The Thule Universal 2-Bike Stacker, part # THBSTK2 can handle two bikes with a combined weight up to 70 lbs, so as they sit it wouldn't be a good choice for your e-bikes.
